Wisconsin "Cheeseheads"

Geese were flying here this morning cw....they were headed your direction. Next weekend bow deer opens....I'm all ready to go...we are issued 3 doe tags and a buck tag when you but your license. Should be able to pile up some tender delicious red meat with 6 tags when you consider gun tags also. i'm in need of some delicious Kropf's  venzun wieners for starters.

Send em on over...there's jerky to be made. I'm 99% sure there was a wolf howling about a 80 away last night. I know it wasn't the coyotes cuz they scream and there's always a pile of them screaming together. This was a lone howl just like in the movies. It was bone chilling awesome.
 
Yep, black bear is similar to doing a pig (same family) I prefer the roasts over most of the cuts except the back loins....bear makes the best sausage ever, and I prefer that that over saving stuff for burger....folks that have tried mine at the bashes always said it was gourmet excellent. it does smell wonderful when roasting and the flavor is the finest.....always trim your cuts to lean, even when going for sausage.

Heck ya... the pressure cooker would work well with steaks that otherwise might be tough. Roasts are the best and yes the ribs are very, very, worthy of saving...the meat falls off the long ribs and is always tender...we never waste anything usable...otherwise, I think it's better to let them run wild. But that's me...

Nope not off hand....mine were always through the taxidermy guy doing the rug or mount....but check around some more and see what you can find out...cheap doesn't mean quality, I know you know.

all done with the class reunion.

I cooked a bear roast once that my bil gave to me.
I thought it tasted a lot like pork.
Yes, trim off as much fat as you can..


I am so stuffed from eating almost steady for the past two days, I can hardly talk about food. and I still have to go to breakfast tomorrow morning with DD Brenda..

the crew showed up today and got most of the soffit and fascia up.. going to come tomorrow to finish up.
