Wisconsin "Cheeseheads"

up until I started looking for recipes for plum jelly a week ago, I didn't know there was such a thing as liquid pectin..
we have some sure jell here, but I don't like the idea of 7 1/2 cups of sugar.. we used to do it, though..
with the pomona , I just use one cup of sugar to 5 1/2 cups of juice. ends up sort of like
sweet & sour..
I noticed the garbage apple tree has plenty of apples on it.. that tree has yellow very soft apples. I don't like them. but I thought that maybe I could make some apple sauce with them ? another thing I have never done.
have to think about this for awhile..

That is funny @jvls1942, the guy who grew up in our house calls the apple trees "garbage apples", lol. And they are yellow with just a touch of red on some. I think they are cider apples, but I am not sure. No-one knows or has any idea when I describe the apples to them.
I have found if I pick the apples early in August, when they just turn from green to yellow, they are good for applesauce. This year it was August 10th that I started picking. They cook down to a nice thick applesauce consistency without any effort besides peeling, dicing and bring to a boil. Add a touch of lemon juice, some sugar and cinnamon. I use 3/4 of a cup of sugar and 1 tablespoon of cinnamon for 2 1/2 quarts of applesauce. I don't have to run them through a mill or use a food processor or anything to get the right applesauce consistency. The apples at my place are now over-ripe and too soft and mealy to do anything with besides pick and put out in the compost pile for the wildlife. My first year in the house I tried making an apple pie and got an Applesauce Pie, which was pretty good poured over ice cream.
I am planning to buy apples from the farm stand by my sister's house in Door County. At the end of their apple season, they sell apples for $1 per pound and I can get a nice variety. I will can Apple Pie Filling from them. I like a mix of apples for Apple Pie Filling.
 
I think my yellow apples are Yellow Transparent.
I don't remember for sure, but I think we actually bought that tree.. looooong time ago.
the apples are good, as far as not being wormy.
pretty soon I will take one of the air layers off of the other apple tree to see if there are any roots developing.
yesterday we bought a folding 6ft table to set out in the sun porch for my pots of root stock.
(hopefully)..
grapes, 2 kinds of apples, and mulberry tree.
IDK if we will turn the heat on out there this winter. but it shouldn't freeze too hard since it is attached to the long side of the house. 40ft.
I am looking up recipes for plum sauce for duck or ham. same o run around. list of ingredients, but not any specific amounts.

Annie bought a set of tools with pink handles with flowers on them.
she figured I wouldn't use her tools.. she was wrong. LOL

Nope just the dry pectin sold at our store. It's been a fun day here like always...froze a couple lbs of green beans and saved a pile for super tonight.
Finally cut the hay field some consider lawn....oh my, wish I had something to feed the grass to. Big load in the secure pen for the little ones….they think it's heaven... lol and are enjoying the once was pile.

Yesterday I peeled the covering off of one apple air layering. it was the first one I ever did, and it was a very sloppy effort. well, despite of how it looked, there were roots forming in it. I covered it back up. today I will redo it properly. I figure I have until the end of Sept to let them all percolate ..
I tested the plum jelly on whole wheat toast.
toast/jelly, toast/butter/jelly ,
toast/ butter/peanut butter/jelly.
all were just fine..

Fish Fry Friday again already..where did the week go?
Tonight it's baked haddock and baked potatoes....the green beans yesterday were delicious, I'm really happy that I replanted them and get to enjoy all the freshness they provide....cream beans will be on the menu with the next picking....
Daughter Angie is flying out of California now, first stop is Atlanta....prolly be in Green bay around midnight...waiting for all the good stories...

good morning, I made the mistake of going to bed before 10. woke up around 4. got up at 5.
waiting for it to get light outside .
I want to re-do the air layer on the apple tree that I unwrapped to check for roots.
I'll bet Angie is glad to be home..

it got light, but then a thunderstorm came rolling through at 7:3o.
it didn't last long. at 11 I went out and did the air layer..

Thanks for the kind words...prolly wait till tomorrow to talk with her....she did say they are starved for workers and they wanted her to stay (wasn't her option but her employment)….sure wish I was young and knew about the chances to make big money and serve the Nation....
