BTW--how come the spell check doesnt see lefse? Cant help us spell cochin or austolorp either...on a chicken site no less! SHEESH!There was much I wanted to comment on...CRS big time! Oh well...

I am the kind of German that has a Norwegian father and an Irish mother both of which love kraut.

I guess you could make Lefse with corn flour. That's what the Mexicans do. Some day we will find out the vikings were in central america teaching cooking long before the discoverers came. The stuff they find now show the vikings did not come as conquerers, instead they showed up as immigrants that assimilated into the culture.
 
Terri, I would substitute the flour in the pie crust recipe that I posted earlier. With lefse, you really want to potato flavor to come through, and with some of the GF flours there is too much soybean flour in the mix that will give the lefse a 'beany' flavor. I have made braised cabbage with apples a few times. I like to cook up chopped bacon first, then saute the apples and cabbage in a few tablespoons of the bacon grease. It would be great with some onions added to it as well. You can use either red or green cabbage.

Here is my recipe for lefse; I am neither Norwegian nor German, yet I make lefse and my own kraut for the DH..... this is a recipe from a friend of mine. It is her great grandmother's.

You will need a pastry cloth rolling mat, a cloth rolling pin cover, and a large skillet. Flipping stick is optional... I use a regular floursack dishcloth for my pastry cloth, and I tack it to a large wooden cutting board so it remains tight.


6c russet potatoes (uncooked)
1 1/4 c flour
3T butter (melted and cooled)
3T cream
1t salt
1t sugar

Boil the potatoes until they are just done, drain well. Rice potatoes while they are still hot (I spread mine out on a jelly-roll pan to let them steam off as much water as possible) allow potatoes to cool. Add flour to potatoes and stir until just mixed. Combine butter, cream, salt, and sugar; add to potatoes and mix well (#2 setting on kitchenaid). When dough is mixed it should not stick to your finger. Form dough into 2" balls, you should have enough to make 15-18 balls (one dough ball = 2 one inch scoop balls (the cookie scoop type)). Before rolling out the ball, make sure your pastry cloth and rolling pin are well floured, and always dust your cloth and rolling pin in-between each rolling out. Preheat griddle to 475*. Roll out each ball as thin as you possibly can, and fold into quarters once rolled out. place on griddle and unfold (if you have the stick you can just put the rolled out dough on the griddle). When bubbles form, flip and cook the other side until brown spots are visible through the lefse. Cool between two towels. You can fold inst quarters and package in ziploc. Can freeze or keeps in fridge for one week.
 
John...I love cabbage and apples. Add cider, salt and pepper and some cider vinegar...yum. Now I want some...need to buy some cabbage.i have a pork loin in my fridge so that would be good.

Long rainy day here. Hens decided that laying was not fun on such a wet day and we only got one pretty blue egg. Puppy was doing good with potty when I am watching him...had first accident at 8 when I was putting kids to bed. Sigh...was hoping he was getting it.
Hoping my boy goes to school tomorrow... He was feeling off all dy. no major fever or anything, just was not hungry, headachy etc. busy day tomorrow so want some time for me to get stuff done since it is early release and I will have extra kids at pickup time. Ad vet appointment, then info meting for peewee wrestling. Busy day tomorrow!!!

Evening all! Do you eat apples/cabbage hot? Sounds delicious-maybe I will bring some to Thanksgiving.
My silly chickens wont go in to roost? Will they be ok-I am soooo sick of running out there at night, grabbing them off their perch and throwing them in the coop! Same stupid ones too. They know how to get out in the morning, why can't they go back in at night?

Well- I think tomorrow will be my first taste of winter chicken keeping. Anyone know how goats do in winter weather?
 
There's a lady named Tamara Larson in Polk county who does Wildlife rescue. My father in law worked with her at the sheriffs dept. Anyway they just aired her story on abc news in Minneapolis. She took in a bear cub that was starving and dehydrated. Someone broke into the pen and beat the cub so bad it lost use of its back legs. She couldn't find anyone with the proper license to take it so the DNR wanted it put down. So Tamara applied for the license. The DNR pulled her rehab license for bears and she lost her job as a game warden because of this! I think the residents of Wisconsin need to stand up for her. The bear is recovering and using her back legs somewhat, but still cannot be released into the wild. Why should someone that cares so much about what they do be punished? They took everything away from her for not killing this little bear cub. She has a website if anyone is interested. I think its Tammi's Wildlife Rescue.

We just put 2 six week olds out in our "intermediate" chicken area with our old banty roo & put them on the roost on the first night. They figured it out on the 2nd night, eventually.

I know there was much more to comment on but I am so darn tired. Been a busy weekend here. We really needed to take advantage of the beautiful temps while we had them to finish up outdoor chores. And luckily the rain held off down here til after 4pm. So naturally DH decided that this AM would be a great time to defrost the freezer.

We did get the garage cleaned, though, so we can finally park in there again. Why we need so many empty boxes is beyond me, but now that I flattened them all, I'm sure I'll be needing them soon. Isn't that how it always goes? But never fear, I'm sure there are more in the basement.

DH got the bike all winterized & stored, and I got some laundry done. Stripped the bed & laundered all that too. And got the heated waterers all set up & plugged in for the critters. Sounds like they are going to be needing them too soon.

One of the Moosettes was not looking good today so I put her in the isolation ward. She is pale and pretty lethargic. And of course the roosters were all trying to have their way with the poor girl. Jerks!

She pooped a while later & it was mostly clear with a little bit of greenish & a dark spot. I shined a flashlight on it & it kinda looked super dark with a tinge of blood? Is cocci the only thing that will have blood in the stool? I sure hope it isn't that. She is 8 months old & so far seems to be the only one not feeling well. Any ideas, anyone? Thanks in advance!
