Would you rebuild this shed or start from scratch? (Image heavy)

I have used just about any thing and everthing to patch or modify structures for coops. If your on a budget then KISS. Patch up with scrap wood and nails/ screw. Watch Craigslist for free lumber to repurpose and fencing. I am a cragslist junky. Picked up a 1986 F250 for $460 from CL. It looks great for its age and runs good.
 
Yes, do use what you've got! I remodeled from something worse and am glad I did! This structure looks excellent and still "square". Meaning you shouldn't have a problem with cuttting wood and insulation to fit!

Wow! Thank you everyone for the great ideas! I will certainly be reusing this shed, then.

Are you kidding...that's in great shape. As everyone else has said check craigs list. They have a section called materials, as in building materials. Also put whatever you need into the search button because sometimes things will be under household. You can almost always get shingles. Also doors and windows. Get all that stuff before you start cutting so you can take any size door or window etc. We made a big mistake with our coop windows. Get a solid panel glass window that you can prop open for ventilation, prop open from the outside put harware cloth over the opening on the inside. We have slider windows and the rain pours in, as does the wind. It will be expensive now to take those out and replace. I just got some vintage windows with the wavy glass, all sizes for 5$ each off craigs list. I got them for the glass only. Now I have to find windows to fit the holes we already have and it is much harder. I think your coop will be awesome.

I agree with the hideous part. Hopefully it will be less hideous when I'm done working on it. Unfortunately, I don't have a whole lot of flexibility about the site, as I'm working with a suburban backyard. I"d like to keep it close enough to the house to make winter care east, and to keep the coop doors facing south (towards the house plus for light). If I move it to the other side of the yard, it will be behind our garage.
