wrap or not wrap, cover or not cover, ice bath or not

kill chicken 30 seconds in boiling water pluck feathers. then what?
should we cover them with plastic wrap or not? if not should they be covered?
how long left in cooler @40degree's? have 29 meaties to process.
would like some input. never processed domestic animals.

Thank you. we have 15 astralorpe hens for eggs and 1 rooster. They live in a 2 acre pen that is covered with aviary. it is wooded with some grass. they are happy birds. The meat hens are in a 20 x8ft pen, but would like to free range them. our only problem is coppers hawks.
