I know which flowers and which trees and which weeds they are collecting nectar from because I see them doing it.

I don't particularly care for the Russian olive honey.

The fall honey made from a mixture of sweet clover and various weeds is awesome.

The spring honey which I never get to collect made from crabapple and apple blossoms has a slight cinnamon taste to it.

I collect the fall honey. It's the spring honey they need to keep.
