The egg you got - it was absolutely fresh, yes? The yolk goes from the ova and into the abdominval cavity where the "egg funnel' usually draws it in. However, double yolks are sometimes caused by one yolk falling into the cavity and not making it into the funnel - then getting back into the funnel (if the hen skipped a day) which makes me wonder about the blood - was it in the abdominal cavity, especially since it's just the one yolk and not the other - or was it up by the ova, or at the beginning of the funnel. I suspect not the latter because the other yolk isn't bloody.
On hydration, yes- you're probably keeping her hydrated. I'd use that to your advantage and cease the fruit treats, and instead give her a moist mash with some honey in it (since she likes sweet) more damp than the usual damp mash (which I like to have be nearly dry).
Maybe it's the water? Funny about her drinking when you 'forced' a taste? Maybe put some honey in the water?
But at least she's passed an egg.
