320 ml of water
2 grams of yeast
480 grams of flour
14 grams of salt
We usually knead by hand but when we don't have much time we use the kneading machine and this is the result
Once you have made the dough, you have to wait almost 7-8 hours and then you can divide it in smaller pieces
After this step, you still have to wait 2-3 hours and then you can roll out pizza dough and put on them what you want. If you want to do more faster, just put more yeast in your dough (we use less yeast cause it's known that yeast cause digestive system problems and we want healthy homemade pizzas). Due to the long time of preparation, we prepare the dough the night before if we want to eat pizza for lunch, otherwise in the early morning if we want to eat it for dinner (we don't eat pizza everyday in Italy
normally once every 1 or 2 weeks)![]()
With regard to the photo, two pizzas are with mozzarella and anchovies in oil, the brown one is a 'stuffed' pizza (pizza ripiena) with escarole, sausage pieces and pitted olives.
