So what exactly makes an EE? I have two eggs in my bator from my AM roo and RSL hen. Will the chicks be EE?

Yes.
An EE is anything that can produce an egg that has the blue tint, but is not a "purebred" ameraucana. I put purebred in quotes though because SOME EE's are actually still purebred ameraucanas.

The problem with Ameraucanas is that only certain colors are part of the breed standard. Any color NOT in that list, is considered an EE - even if both parents were purebred. For example, a black bred to a silver MAY give you something with columbian markings on the neck, which isn't allowed! (This is just for example, I'd have to research the colors allowed and the colors they could produce when crossed to find out a true combination that produces odd results.) So it's considered an EE. It's still a purebred Ameraucana, but it doesn't match breed standard, so it's considered an EE.

But the blue egg gene crossed with brown, is what gives you green eggs. So those are definitely mixed breed.

Only if it CARRIES the blue egg color, which green does. Pink is actually the color given from purebred light Brahmas. Olive is a blue crossed with a dark layer such as a Maran. So as long as the blue egg TINT is there, it qualifies as an EE.
 
So, I'm still getting my sebbies (geese). And they're still coming from two (maybe THREE) sources. The first set of eggs is supposed to go out tomorrow in the mail. It was going to be yesterday, but she got a flat tire on the way to the P.O. and didn't make it in time. So hopefully tomorrow.

The next set of eggs will arrive... um... I don't know. The lady hasn't been online on BYC for almost two weeks, but I sent her an email. But that's the big "order" of 5-6 eggs.

And the third possible source is 3-4 saddleback sebbies that I have to get onto a waiting list for, starting March 1st. That set alone will be $290! That's why I'm still "considering" it! But they will be goslings, not eggs.

Anyway, expect me to be jumping for joy when those first eggs arrive, and just break out into random dance if they develop and hatch!
