My Norfolk Greys' eggs have a noticeably large yolk:albumin ratio; it prompted me to look for a comparative study on this. The best I've found so far is this http://citeseerx.ist.psu.edu/viewdoc/download?doi=10.1.1.619.1038&rep=rep1&type=pdf
but it is very limited in scope. Can anyone point me in the direction of other papers? Or should we try to crowd-source a bit of citizen science and do our own comparison?

Yolk to white in eggs seems to be a breed thing as well as an individual thing. Big producers are able to breed birds to all have similar eggs, so I think it's genetic. I doubt you will find statistics on it.
