You can absolutely leave eggs out right?

I usually leave mine in a wire egg basket on top of our bar in the kitchen...Sadly I'm going to have to make room in the fridge for them b/c of the cat. He has figured out how to push the basket off the counter and thinks they are just a free meal.

But I used to leave them out for a few weeks. Just don't wash them, it takes of the "bloom" that keeps bacteria out of the egg.

I leave mine, unwashed on the counter. They are probably not there more than a couple of weeks because when I get more than a dozen I'll give a dozen away. I only have four birds.
If I have a really dirty egg, I wash it in hot water and refrigerate. I leave them out because I was told eggs can easily pick up odors from things with a strong smell in the fridge.
 
But what if there is a chance the egg is fertile? I have roos and hens, and neither are old enough to make eggs. But I am curious that if I do not refrigerate the fresh eggs, will they still develope if fertile? Or develope, then stop half way through? (Kinda freaked about finding a baby when I crack one open). I am a first time chicken farmer with a small flock of barred rocks, americauna, and some new ones called terricuanas.
 
I leave 'em on the counter if I don't have to wash them. They'll be out for a few weeks at most for me, I think they can go longer... but we've eaten them all by then!
 
@Blueicebird - fertile eggs need to be incubated at 98* to grow a chick. That's why you would need a broody hen or an incubator. Although the heat this week has been close!

Is the terricauna a variation of the americauna? A different color egg perhaps?
