Your definition of Omelets

The omlette I love most: scrambled eggs, with no milk (3 eggs), and the stuffing is mushrooms sauteed in butter, sharp cheddar cheese and avocado. Avocado on top, and more cheese. IMHO there is nothing that doesn't go with eggs. Even jelly (the British in me).
 
A very good friend of mine is the omelet maker. He does use just a tiny bit of water added to thebeat eggs for fluff. He absolutely forbids milk/cream added when he makes them. Cooks in the pan in a thin layer til nearly done, adds the fixins and folds. Absolutely wonderful omelets.

I on the other hand can not make an omelet to save my life and make what I call scrambled egg omelets. I do normal scrambles (with milk or cream) and add the fixins when the eggs are about 3/4 done. It is all mixed up but still tastes good.

I consider a plain coffee with a little cream and maybe sweetner. I am a foo foo coffee drinker, but consider them 2 different things and sometimes just want coffee.
 
I love mushrooms sauteed in butter in an omelet! I like ham and some type of cheese along with the mushrooms, too. Sometimes I even add finely chopped, cooked broccoli, since that's my favorite veggie. When I make shrimp omelets, I like a little sour cream inside, rather than cheese. For a dinner omelet, I've also made them with leftover fried potatoes and smoked sausage. It's good! Most vegetables, cheeses, herbs and a wide variety of meats have ended up in an omelet at my house. Something just comes over me, when I get that pan out and start browsing in the frig.

I was laying in bed after I woke up this morning, thinking about this thread and different kinds of omelets!
 
I don't make omelets often, simply because it's easier to just crack a couple eggs and cook them over easy. The only omelet I have made without turning it into scrambled eggs with other fixings is what has become a hangover omelet for mornings after a little too much indulgence was had.

I'll cook up corn beef hash until it's crispy, then mix up 3 eggs and let them cook until it's close to done. I'll add the crispy corn beef hash and some sharp cheddar, fold it over and move to a plate with a little ketchup on top or the side. Sometimes I'll leave it on the stove until the cheddar melts more than it would from just having the egg folded over on it. It works like a good pick me up to get rid of a hangover, and it's a very filling meal.

As for coffee, I like mine with a little bit of honey. Still tastes like coffee with a little bit of sweetness. Sometimes people go way overboard with their specializations for a simple bean. Civet coffee (Kopi Luwak) is proof of that.

Mmm... I love corned beef hash that's fried until it's crispy. That sounds delicious, like a hash omelet. I usually fry it until it's starting to get crispy, then crack some eggs over the top and put a lid on it. When the eggs are almost done, I put some cheese on it, too. I like the yolk to to ooze over the hash when you eat it, but that might not be appetizing with a hangover.

I like a heartier one sometimes though, which is a favorite at most restuarants round here
-ham, cheese, jalapenos, onions, tomatoes, green pepper and topped with salsa.

oh and my favorite is my husbands concoction.
Hash browns and onions, crack in a few eggs and bacon crumbled in and put in a flour tortilla with salsa on top, but green salsa. The best.
