Well I have had 5 wyandotte, 4 barred rock, and 4 partridge rock roosters. I kept all till they were 16 weeks old. The one thing I can say is when it was time to choose who would be kept, it was hard to eliminate either Blue Laced Red Wyandotte. I loved both of them, and one of them would come sit in my lap if I had food. Almost all the rocks were agressive toward humans, or loved us and ignored the other chickens. One SLW was afraid of everything and the other we dubbed Ghengis the Battle Chicken, and my SPW is like a hen who lays no eggs... he isn't at all roostery. It depends on the individual. All of those were the same age, from the same hatchery, all raised together. They all turned out different anyway.
If I could keep only one rooster, I would keep my Blue Andalusian. Little bugger was raised in the house with the kids, cat, and dog and thinks he's one of them. He acts all roostery but lets us pet and hold him and he is FEARLESS. If anything he doesn't like comes near their run, he will bite its nose for it. He isn't even full grown and he backed down a hyper labrador who has been known to maim/kill chickens when they escaped from their yard. I dunno how much of that is his upbringing and how much is his nature. He was a solo chick from a batch of eggs we incubated so he was raised alone. The dog taught him how to beg and forrage for table scraps but it was a struggle to get him to go outside because he didn't like the other chickens at first. Spoiled thing thought he was gonna continue being a house pet (and might have succeeded if it were possible to litterbox train a chicken!) But now he has adjusted to being a chicken, and I think he will make a fine flock protecter. Especially since him and the dog are such good friends.
I say pick the breed you like best and pamper the chick- hold him and feed him and expose hime to other animals if you can safely do so. Treat it like a puppy. It worked for my little Indigo. He's growing up to be a great rooster!
