Your Favorite Cool-Weather Soups

Homemade Sweet Potato Soup and Clam Chowder

Soup is good food! It's economical, and there is something about it that just says "comfort". One of our favorites that I make starting about this time of year and throughout the winter is a hearty "orange and green" veggie soup. Made from orange veggies (carrots, sweet potatoes, maybe pumpkin if I have it on hand), some celery, onion, stewed tomatoes and then greens of choice - usually spinach, chard or kale, which goes in last. We like to eat this hot and spicy - so I add some of our home grown chiles or habanero flakes and sometimes even a nice squirt of sirracha sauce. Basically I cube all the veggies and simmer them until soft in home made veggie stock, add the seasonings (s, p, garlic, hot pepper flakes) then use an immersion blender to mix most of it and then add the greens until just cooked and serve. With some warm bread and butter you have a hearty (and healthy) meal!

I will be testing this one out soon with my homegrown pumpkin, but honestly, how can anything with bacon & gorgonzola cheese be bad?

My faves are vegetable loaded with all sorts of veggies, split pea with ham, navy bean & my new current E-Z to make: lentil

I have a microwave pressure cooker that turns out perfect soup in 1/2 hour.
The only thing wrong with it is it is small - maybe holds a quart?
OK for just me, but no way it would work for a family. And more leftovers would be nice too...
 
without a doubt my favorite is portuguese Kale soup. Saying this I'd just like to say I'm so sorry for all you people out there who don't know what chourice (pronounced shadice) and linguica are cause it makes this soup incredible. And I'm making some tomorrow. Oh and you have to have a fresh loaf of portuguese bread too!
