Your favorite fancy Vegetarian/Vegan main dish?

Ok, so, every year I have me a nice holiday party for Yule.

While I'm not, I have several friends who are vegetarian/vegan/pescatarian etc. and a few people who have lactose intolerance. These friends attend my party of course.

Every year I make one or two meat main courses and a vegan or lacto vegetarian main course to account for these people. But I'm looking for new ones because there's only so many variations on squash and mushrooms you can do. So I'm looking for your favorite recipe! The basic requirements are;

Made with whole foods, not meat-ish plants like a tofurkey. Not that tofu is a problem, but like veggie bacons and vegan cheese and such are. So no fake meats/plants trying to take the place of meats/cheeses/etc.
A good protein source like mushrooms or nuts or both. Or beans, etc. (This is why tofu is fine)
Very holiday centerpiece! A bowl of soup isn't a very good centerpiece, roast carrots aren't a very good main dish, etc.

You can see I'm in a bit of a squash-mushroom-nut.... Rut. So I would value your input! Please share your fancy holiday main dishes (vegetarian and lactose free are a must) that I can steal for my holiday! Thanks! I appreciate your input!


I would perhaps try a vegan Wellington or pot pie. Something with a beautiful crust that’s hearty and filling where you won’t miss the meat (add mushrooms?). I don’t have a specific recipe as I’m not even close to vegan. But I don’t think anyone would be disappointed by a well styled savory pie.
 
Pasta

Some nice tagliatelle or linguine. Not vegan but a simple cream sauce or butter with truffles or sage, topped with parmesan. Or maybe a tomato pasta. Fresh tomatoes, sauteed onions, garlic... Simmered in olive oil. Salt, pepper and fresh lemon and basil for taste. Keep it oil based for vegan. Add cream for vegetarian. Again, parmesan. :D

This right here! Also, I don't have fancy serving dishes nor the space to store them. I don't know anyone in my age group that does...

So many of these posts lead off with an approximation of "It's not what you're looking for BUUUUT!". Like, why ya'll wanna be down on me for not being thrilled but you're literally leading off with the fact you KNOW that you're not posting what I asked for. :p

@ShannonR the forum is egg chicken and other recipes. I didn't see anywhere else cooking related to put it. And yeah, it could theoretically be sculpted. That's why I liked Aunt Angus's idea. Those pumpkins would probably be extra beautiful with patterns carved in. But... It's so much just the things I served previous years (Squash stuffed with mushrooms, mushrooms stuffed with squash...).

I really wanted something new. I think the wellington and pot pie ideas are very promising. Many of the recipes I've seen for them have some sort of fake meat in them but I suspect I could work out an alternative.
Missing the meat isn't so much of a problem as it tasting good, looking like a centerpiece (evoking the same feeling as, say, a giant ham or roast bird or crown of ribs), being a protein source, and being not a mess to serve.

Again - lactose free is a must. :T I'm not putting a vegetarian dish out that my lactose-free people can't eat without pain.

Vegetarian or vegan lasagna would be a good option for a main dish. I don't really have a recipe, but I've made it before (vegetarian because I can't give up my cheese/dairy).
 
No vegan cheese (I've never met one that I didn't hate, other people have processed soy issues, it's not in line with the spirit of the holiday), no lactose. :(

Cheese and cream would make fancy dishes instantly easy but they're off the table.

It's so hard to find something that high-end that's vegan. :(
