Zucchini

I'm going to give this a try today.

APPLE ZUCCHINI CAKE

4 lg. eggs
1 c. vegetable oil
2 c. sugar
2 c. peeled and grated zucchini, drained
3 c. unsifted flour
1 tsp. soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. baking powder
2 tsp. vanilla
1 c. chopped nuts
2 1/2 c. peeled and chopped apples

Grease and flour tube pan. Beat eggs, add oil, sugar, zucchini and vanilla. Mix well. Sift together flour, soda, baking powder, salt and spices. Add to creamed mixture. Add apples and nuts. Bake at 350 degrees for 1 hour 15 minutes.
 
There are many variations for this recipe, I usually add in mushrooms. Just Google zucchini Frittata Recipe (plus it uses eggs)

Zucchini Frittata Recipe
Food Network

2 small cloves garlic
Olive oil, for sauteing
1 medium zucchini
1/2 bunch basil
8 eggs
2 tablespoons milk
Salt and pepper
1/4 cup grated Parmesan

Preheat the broiler.
Start by crushing some garlic and heating it in some olive oil in a medium nonstick saute pan on the stove. While that is heating up, very thinly slice the zucchini on a mandoline. When the oil and garlic are heated, tear some basil into the pan and add all the sliced zucchini. Cook until the zucchini is tender, but not cooked through, about 2 minutes. Season with salt and pepper.

Blend eggs in a blender with a little bit of milk and some salt and pepper. Blend on the highest speed.

Pour the egg mixture into saute pan and let it sit for 1 minute. When there isn't much loose egg left in the pan, grate some Parmesan on top and place pan in the broiler for 1 minute.

Take pan out of broiler, let it cool and set in pan for 5 minutes. When cool invert a plate on top of pan and turn over. Slice and serve.
 
Fried zucchini...sliced zucchini, dredge slices in egg, and then flour, fry in hot oil until golden brown, turning once..

Also make zucchini relish and zucchini lasagna.
 
We dehydrate zucchini. You can eat it as chips, or add it to anything as you cook. (casserole, sauce, noodles)
 
Do you like fresh goat cheese? I have a recipe for zucchini with pasta and goat cheese. Only three main ingredients.
Cook Pasta and reserve 1 cup of pasta water
While pasta is cooking, saute zucchini in olive oil with garlic, salt, pepper
Add 5 oz of goat cheese to cooked pasta and then add your reserved water, stir until creamy(looks like fettuchini alfredo)
Put pasta/cheese into bowls and top with your cooked zucchini. Garnish with extra goat cheese and parmesan cheese.
 
SOOOO glad I found this. I planted 3 zucchini plants and they are growing like weeds. I have never had anything other than fried and we can only eat so much of that. Tonight I am going to pickle some bread and butter zuccs, so I hope they turn out good. Gonna make some of Anne's bread and freeze it up
