Vegetables are good in frittatas too! (Meaning veg other than potatoes)
I have a frittata LIKE recipe: In a large skillet I saute 1/2 onion sliced,
I use canola oil, I have a slicer for veggies....I slice ONE LARGE potato add,
let that brown....I beat with a fork 2 large eggs....over the now browned
potato and onion ...sprinkled with favorite herb mixture...I grate swiss
cheese and spread that on top....put the cover on for 5 minutes (check)
till the eggs are cooked and the cheese is golden. (I have a purchased
jar with a turn-sprinkle top ...Organic Olde Thompson with dehydrated
veggies, onion, garlic, carrot, red bell pepper, organic spices, mustard,
and organic lemon rind.....but your favorite spices and herbs works. I
serve a veggie as a side and dessert of course. Aria
