Chocolate Cupcakes
1 cup flour
1/2 tsp. baking soda
1/4 tsp. salt
1/3 cup cocoa powder
1/3 cup chocolate chips
1/2 cup water
3/4 cup white sugar
1/2 cup sour cream
1/2 cup oil
2 eggs
1 tsp. vanilla
Preheat oven to 325. Line a muffin tin with 12 paper liners.
Whisk flour, baking soda, and salt. In another bowl, combine cocoa powder and chocolate chips. Heat water in microwave until steaming, then pour over the chocolate/cocoa. Whisk until smooth. Add sugar, oil, eggs, sour cream, and vanilla and whisk.
Add dry ingredients and mix with a spatula - don't overmix. Divide batter into 12 muffin tins and bake for 18 - 22 minutes. Toothpick will have moist crumbs on it.
Enjoy! I frosted mine with chocolate whipped cream, but chocolate buttercream would be good too. Or just plain cupcakes!
