Here are two of my favorite MeatLoaf's:

2 eggs beaten
can cream celery soup undiluted
pepper
half a package of cornbread stuffing mix crushed
DEER MEAT or other meat (deer meat makes it so much healthier)

Mix all together and bake at 350 degrees for about 1 hour and 15-30 minutes. Till no pink remains. When I use deer meat, I add just a little water to the pan, and then after the hour is almost up. Because deer meat does not have the extra fat like other meats.

OR:

2 eggs
1/4 c whole milk
worcestershire sauce
tony chachere's or seasoned salt
onion powder or diced onions
1 cup quick cooking oats
parsley
diced carrot
DEER MEAT or other meat
1/2 cup of tomato catsup

Mix all ingredients except catsup and meat. then add meat. top with catsup.
bake at 350 degrees for 1 hour to 15 - 30 min till no pink remains.

Hamburger is thawed....and I got all the ingredients ready.

Think I am going to have green beans with it, and the bread I made last Sunday.

Whipped potatoes sounds good, but I'd have to make gravy.

I have a pork loin in the freezer...hhmmmmm....I may get it out to thaw till tomorrow. My older son and my dad went to NY to a farm auction last night to get ahead of the snow, I think they may be stuck there till tomorrow.

Muscovy Duck Stew

I will attempt to make stew out of Muscovy duck breast! I will make it as I do beef stew, since the duck meat is beef like I think it will be good!
I will drudge the duck in some flour and spices after cutting it into chunks.
Saute it in EVO, and then cover with beef broth to simmer. I will add Homegrown red Potatoes, Homegrown green beans that I canned (Won't add them till the last ten minutes)
Peas, carrots and a stalk of celery.
I will let you know if it was good!
We have only grilled the duck meat, so I have no idea how it will turn out!
It is so good on the grill, tastes lik a really good cut of steak.
I have also grilled it and cut it in thin strips and served it on flat bread with lettuce and tomatoes with a cucumber sour cream sauce, that is so so yummy!!!!

My 2 yr old only wanted bread and butter to eat for lunch.

It's another snow day here so we are all home again today.
