Blackberry Cobbler

    8 c. blackberries (fresh or frozen)
    2 tsp. baking powder
    1 1/3 c. sugar (for filling)
    1/2 tsp. ground cinnamon
    2 rounded tbsp corn starch
    6 tbsp margarine or butter
    2 c. all-purpose flour
    2 eggs (beaten)
    1/2 c. sugar (for topping)
    6 tbsp milk

    Cooking Instructions

    To prepare filling, in a saucepan, combine the sugar (for filling), blackberries, and corn starch. Cook and stir till thickened and bubbly. Then place in 12 x 8 baking dish. For topping combine flour, sugar (for topping), baking powder, cinnamon, butter, eggs, and milk. Drop topping on the blackberry filling. Bake at 400 ° for 20 to 25 minutes, or until toothpick inserted into topping comes out clean.

    Note: Serve warm with ice cream
