1 pkg. chocolate mint cake mix
1 can chocolate frosting
1/2 gal. chocolate chip mint ice cream
Prepare cake mix per instructions on box and let completely cool. While cake is cooling let ice cream set at room temperature. Slice cake layers across, making 4 layers. Spoon ice cream thickly on the first layer, cover with the second layer, continue until the last layer is just cake. Quickly frost top and sides of cake with frosting and place in freezer for one hour. Cake can be garnished with fresh mint leaves when served.
Note: For a quick dessert you can substitute angel food cake and ice cream of your choice
