1/2 lb. ground chicken (or turkey)
2 cloves garlic, minced
1 cup onion, diced
1 tbsp vegetable oil
3 cups mushrooms, sliced
1/2 cup diced green and red peppers
1 (14-oz.) can "no salt added" chopped or diced tomatoes
1 (14-oz.) can "no salt added" chopped or diced tomatoes, pureed with juice
2/3 cup water
1/4 tsp. salt
2-1/2 tsp. chili powder
1-1/4 tsp. oregano
1-1/4 tsp. cumin
1/4 tsp. black pepper
dash red pepper flakes
1-1/2 tbsp finely chopped fresh cilantro
Brown chicken, garlic, and onion in vegetable oil in a large pot. Add mushrooms and saute until soft. Add all remaining ingredients except cilantro, and simmer over medium heat for 1 hour, stirring occasionally. Top with cilantro just prior to serving. Yields 4 cups. Each cup is approximately 200 calories.
