8 oz. fresh sliced mushrooms, divided
4 large chicken breast halves
2 beaten eggs
1 c. seasoned bread crumbs
6 oz. shredded mozzarella cheese
3/4 c. chicken broth
hot cooked noodles or rice
fresh chopped parsley
Place half of mushrooms in lightly greased 9 x 13 baking pan. Dip chicken in beaten egg, roll in bread crumbs and brown on both sides in a skillet. Place chicken on top of mushrooms. Arrange remaining mushrooms on top of chicken and top with mozzarella. Add chicken broth to pan. Bake at 350° for 30-35 minutes, uncovered. Sprinkle with fresh parsley for garnish. Serve over noodles or rice. Serves 4.
