Lemon Chess Pie

    1 sticks butter, softened
    1 1/2 c. sugar
    3 eggs
    2 tbsp cornmeal
    1 tbsp flour
    3 tbsp lemon juice
    1 tsp. vanilla extract
    1 9" pastry shell, unbaked

    Cooking Instructions

    Cream butter and sugar. Add remaining ingredients and mix well. Pour into unbaked pie shell. Bake 10 minutes at 400° F. and then 30 minutes at 300° F.

    Note: If the edges of the pie shell begin to brown too quickly, cover them with strips of tin foil.
