5 (8-oz.) c. Basmati Rice
1 (10 3/4-oz.) can Lite or Standard Coconut Milk
1 (10 3/4-oz.) can Water
Prepare rice in a rice cooker or boil as usual. Allow to cool slightly. Place can of coconut milk in a 2 qt pot with tight fitting lid. Whisk in 1 can of water and bring to a boil over medium - medium high heat. Add rice and stir thoroughly while returning to a light boil. Reduce heat and simmer about 20 minutes or until all of the liquid is absorb. Serve hot as a side dish. Refrigerate leftovers.
Note: For a stronger coconut flavor, just add an additional can of coconut milk and an additional 1/2 C of water. Or reduce rice to 4 C. Great side dish.
