If you're looking for a protein-packed breakfast or brunch option, cottage cheese pancakes are an excellent choice. These pancakes are delicious and incredibly easy to make, requiring only a handful of simple ingredients. They also make great leftovers!
Ingredients:
1. Assemble your ingredients.
2. Crack the eggs into a mixing bowl
3. Add the other ingredients to the bowl
4. Mix it all up!
5. On a lightly greased, hot griddle (about 325 degrees Fahrenheit), pour roughly 1/3 cup of batter. Repeat - I can usually fit 5-6 pancakes at once.
6. Once the pancake has solidified a little around the edges and has a few bubbles that have popped and remained, flip onto the other side.
7. Cook for a few more minutes, until the pancake has brownish splotches and is not raw.
8. Remove from the griddle and enjoy - spread with butter, jam, or plain.
