6 slices bread
butter or margarine
3 eggs 1 tbsp milk
salt and pepper to taste
1/4 cup cheddar cheese
Trim crusts off bread slices and butter both sides of bread. Fit bread into large muffin cups, press down lightly. Bake in 325 ° oven for 15 minutes until lightly toasted. Remove from oven. Mix eggs and milk, add salt and pepper to taste. Pour into toast cups. Sprinkle with cheddar cheese. Bake at 350 deg oven for 12-15 minutes. Loosen with a knife to remove from muffin cups. Enjoy!
Note: I often make the toast cups the night before and cover the muffin tin with plastic wrap until morning. It really helps the morning go faster. All you have left to do is mix the egg mixture and bake! I store leftovers in the fridge and pop one in the toaster oven for a quick breakfast
