So simple and so yummy
1 egg
1 tsp vanilla
1 c granulated sugar
1 c crunchy peanut butter (you can try smooth but it melts more)
Whisk eggs vanilla and sugar together. Stir in peanut butter until thoroughly blended.
Either drop onto a cookie sheet or roll into balls then place on cookie sheet. Partially flatten the dough using a fork or a meat tenderizer (creates a nice diamond shaped pattern).
Bake @ 350F for 9-11 minutes, until edges are browned.
Remove from oven and let cool on the pan for a few minutes. If you don't let them cool a bit first they'll fall apart. Finish cooling on a wire rack.
This recipe can be duplicated, or tripled or quadrupled....
