1 Venison Tenderloin (butterflied)
1 pkg. Cream Cheese (softened)
6-10 large Jalapeno Peppers (sliced, and seeded)
8 strips Bacon
Pre-heat grill to 350°. Lay butterflied tenderloin open, spread inside with cream cheese and layer on the peppers. Close loin, season with salt and pepper to taste. Wrap with bacon strips. Use toothpicks to hold bacon in place. Place on grill and cook for approximately 35-45 minutes for medium. Use a meat thermometer to determine doneness. Transfer to platter, slice to desired thickness and serve.
Note: Rare- 120°, Medium Rare- 145°, Medium- 150°, Medium Doe- 160°, Well Done- 170°
