Ingredients:


2 lbs. boneless chicken breast
1 cup flour
2 eggs (beaten)
1 inches oil for frying
1/3 cup soy sauce
1/3 cup honey
1/2 tsp. powdered ginger

Cooking Instructions


1. Cut chicken into chunks or strips. Dip chicken in the beaten eggs, then roll in flour. 2. Pour 1-2 inches of oil in frying pan or sauce pan. Cook on medium heat. To test to see if oil is hot enough, drop a pinch of flour into the oil. If it sizzles, the oil is ready. 3. Fry chicken in oil, turning as needed until golden brown. Approx. times: Large pieces 9-10 minutes. Medium Pieces 6-8 minutes. Small pieces 4-5 minutes. Drain off excess oil after cooking. 4. Place glaze ingredients (Soy Sauce, Honey, & Ginger) in a microwave safe glass 2 cup measuring cup, liquid stuff first. Heat in microwave till warm, stir thoroughly. Place chicken in air tight container. Pour glaze into container, place lid on and shake till chicken is coated. Then place in large baking dish. Do not overlap pieces. 5. Bake at 250 degrees for about 10 minutes. Turn over then cook another 10 minutes, or until it sort of glazes to the chicken.


Note: You may need more or less flour and eggs. Great served hot or cold. Great served with Pork Fried Rice. A family favorite.
