Lorraine Quiche

    1/2 lb. bacon, cooked crisp
    1 cup shredded swiss cheese
    2 tsp. all purpose flour
    1/4 tsp. salt
    dash ground nutmeg
    1 cup half and half
    4 eggs, beaten
    1 pastry shell

    Cooking Instructions

    Prepare pastry and fit into a 7 1/2 inch quiche dish. Trim 1/2 - 1 inch beyond the edge of the dish. Fold under and flute the edge. Bake for 5 minutes at 450°. Remove from oven and set aside; reduce oven temperature to 325°. Crumble bacon and remove 1 Tablespoon of bacon and sprinkle the remaining bacon into prepared shell. Top with cheese. Mix flour, salt, nutmeg; stir in milk and beaten eggs. Carefully and slowly pour over cheese in pastry shell. Bake at 325°, uncovered for 30 minutes. Sprinkle with remaining bacon crumbles. Bake 5 - 10 minutes or until knife comes out clean. Let stand 10 minutes before cutting and serving. Makes 3 - 4 servings.
