Ingredients:
1 1/2 lbs. stewing beef, cubed
1 tbsp vegetable oil
1/4 c. flour
salt and pepper to taste
1 1/2 tbsp Cajun seasoning
1 (15-oz.) can diced tomatoes
1 med. sweet potato, peeled and diced
1 med. green pepper, seeded and chopped
2 c. water
2 beef bouillon cubes
1 med. stalk of celery, chopped
1 onion, chopped
Cooking Instructions
Heat vegetable oil over medium high heat. Add flour, salt and pepper to a baggie; add stew meat and shake to coat meat. Fry in oil until browned. Add water, bouillon cubes, Cajun seasoning and tomatoes. Bring to a boil, reduce heat and cover, simmer for about 15 minutes. Add sweet potato, green pepper, celery and onion and simmer for another 30-40 minutes or until meat is done and vegetables are tender. You can reduce the amount of Cajun seasoning, if it's too spicy.
Note: Homemade Cajun seasoning: mix 1 tsp of each: white pepper, garlic powder, onion powder, ground red pepper, paprika and black pepper. Store in airtight container.
