we aren't experts but I have been to a few shows and can help explain a little (it was confusing the first time we went to a show - but fun!)

breed refers to the overall type of chicken (plymouth rock) and then variety is the color (like barred or white or buff)
so at the shows you can get "best of variety" BV (best barred color plymouth rock) or"best of breed" BB is the higher award meaning it is the best bird at the show for all the colors of that breed. usually there aren't many large fowl birds at the shows we have attended, so unless you're going to one of the big shows for your state (ours in TX is the Bluebonnet Classic in January with 1500 birds usually), you have a good chance of winning BB or BV for whatever breed you bring (depending on what breeders you have in your area - for example we have a modern-game breeder and various silkie breeders in our area so we would have little chance of winning in those breeds here locally if we brought hatchery-bred birds. The terms RB and RV mean 2nd place (reserve of breed and reserve of variety/color). You can enter non-standard colors in the shows also, such as various other silkie colors, by listing them as AOV.(I think meaning all-other-varieties).

for your chicks, I would watch to see which ones have the best looking combs (straight up and down and not tilting to the side) and for the boys when they get their wattles you want them to be even/same-size on both sides and nothing weird looking about them.then you can look at their wings and make sure they look good, held nicely up on both sides, without split wing or anything, and see which ones get the prettiest looking tails and nicest barring (straight even barring). post pics later when they're older and I can try to help (based on my limited experience). good luck!
