I got this dish from my great aunt, was the first one i learned to cook by heart, lol
1 cup uncooked rice
1lb cheddar sharp or mild shredded
1lb montery jack shredded
1 stick butter softened
8 oz sour cream
6-8oz Ortega chilies ( diced Anaheim Chilies)
preheat over to 375
Cook rice
In a separate bowl mix the 2 cheeses and remove about 1/4 of the cheese to be placed on top at end of cooking.
Mix the rice , sour cream, chilies , butter , and cheese then put into a 9" by 13" baking dish
Bake for 20-25 minutes then sprinkle remaining cheese on top and bake for another 5 minutes.
Let it set for a few minutes before serving as it will be extremely hot and a bit sticky.
optional:
If you like things spicier swap the chilies with jalapenos
This makes a good sized portion and i tend to make it a couple times a month just for myself lol.
