What are you canning now?

I am so amazed and thankful that so many of are are able to still be canning in the middle of Oct. I am headed next door to go and pick some persimmons. I will freeze this. Sure wish I could can it. sure would make it easier.
 
We ate our first can of canned chili yesterday for dinner. I just got the pressure canner last spring, so must admit to being nervous about the low acid foods. So far we've had chili and chicken broth, neither of which has caused a single ill effect. Guess I did it right!

I have to say, it was soooo nice to come home from a long weekend away and have "fast food". I whipped up a batch of cornbread muffins and we had a yummy, 100% homemade dinner within 20 minutes.

I went and bought some apples today.
7 pecks for cider
2 pecks for freezer

I have 10 quarts of cider canned, plus 5 quarts in the frig to drink this week. I canned some cider a few weeks ago and these apples are nothing like it. They are alot stronger tasting cider. The good thing is I am going to put quite a bit of water in each quart when I open it so it will go alot farther:D

Soon I will get around to freezing the apples.
 
I use an apple corer, peeler and slicer. (or do it the old fashion way, a knife)

Put them in a gallon freezer bag and seal up with as much air out of them. Then just put them in the freezer. Simple as that!

Some people put stuff on them to preserve the color. I don't; they look the same as fresh apples after they are cooked.

I use the apples in pies and apple crisp throughout the winter.

I think the best pie apples are Northern Spys. My grandma always used these.

This year I purchased some Runkel apples. They are grown locally and good too. A little cheaper than Northern Spys.

If you purchase apples to freeze, ask for pie apples or sauce apples. They aren't the "pretty ones" and they will be cheaper. The taste is the same after the skin is off:D

I couldn't stop myself. All my tomatoes ripened at once. I had no more jars but about 30 pounds of tomatoes... so I bought another dozen jars.

Now i've got 11 pints of spicy salsa cooling on the counter in my kitchen. YAY!

It's the one thing I wanted to can this summer but never got around to doing.

I'm done. Really.

OK, I'm not. I've got some sauerkraut to can in a couple of weeks.

Then I'm done.

Oh wait, in about a month oranges will be in season and I want to make marmalade.

Then maybe some orange curd (if the girls ever start laying).

This canning thing never truly stops, does it?!?
 
Now its time for me to get those cherries I froze this summer and make them into jam. Also the blueberries and blackberries.LOL I was to busy with the garden to do much with jellies and jam then.
