I posted this on a thread by Steve but I had several people PM me and ask for it so I thought I'd start a thread for it.
I'll be making this again tonight by the way. I would have made it last night but realized I was out of cheese.
* 3 cups frozen hash brown potatoes
* 3/4 cup shredded pepperjack cheese (I just used the Colby jack that was on hand)
* 1 cup cooked ham, diced
* 1/4 cup chopped green onions
* 4 eggs, beaten
* 1 1/2 cup milk
* 1/8 teaspoon ground black pepper
* 1/8 teaspoon salt
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
2. Arrange hash brown potatoes evenly in the bottom of the prepared dish. Sprinkle with pepperjack cheese, ham, and green onions.
3. In a medium bowl, mix the eggs, milk, pepper, and salt. Pour the egg mixture over the potato mixture in the dish. The dish may be covered and refrigerated at this point for several hours or overnight.
4. Bake for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
After tasting this, I have determined that the ham could easily be substituted for hamburger or chicken and that mushrooms could be added as well. Different cheeses would be fun to try too. Different kinds of onions could be substituted and you could put green peppers in if so desired as well. I am going to try lots of stuff with this.
