Farmer's Casserole

Alright, got my ingredients all ready. Mine is gonna be ham from one of our own hogs and of course the eggs came from our hens. I am out of our own potatoes though.

I did frozen shredded. I am going to experiment with fresh ones at some point.

Steve- looks like you have a good start. I was going to make this tonight but DW has overruled me and is making potato soup. There is always tomorrow night. Like I said, it's better if I cook when she's at work.

our family LOVES Farmer's Casserole!

if you use fresh potatoes, you may want to steam them first,(just a little, not mushy) as they will release more moisture into your recipe.

Steve, that looks awesome. So, you're making biscuits a/o cornbread with that right???
