What are you canning now?

Got a request on PM for this recipe. Thought I'd post it for anyone that may want it.

Strawberry-Rhubarb Jam

3 cups strawberries, mashed
2 cups rhubarb, chopped small
7 cups sugar
1 pkg powdered pectin
4 Tbl lemon juice

8-9 jelly jars

Put chopped rhubarb in a heavy pot. Add 2 Tbl water and cook over medium heat for 3-4 mintues to slightly soften rhubarb. Add mashed strawberries and pectin. Mix thoroughly

Increase heat to high and bring mixture to a full boil. Add sugar, continue stirring, and heat again to a full boil. Boil hard for 1 minute, stirring constantly. Remove from heat; skim any foam and fill jars.

Process in a boiling water bath for 10 minutes.
 
To grow the rubarb, I just asked my sister that. I have a friend who is giving me a plant and she is the rubarb know it all queen. Plant it in a spot that will get rain and full sun. Pull a stalk when it is the size you want it. Cook. I kid you not, those were her directions. It is a very forgiving plant. There are a ton of recipies online. She sent me her top TWENTY. I have yet to try any of them out. One is for rubarb sauce, just like cranberry sauce. Yummo.

yesterday DH & I did...

9 pints beef and stock from soup bones
3 pints pinto beans (leftover, for refried beans later)
9 pints veg-all mix
8 jars lilac jelly
5 pints zucchini/squash pickle
5 pints peach salsa

La~Poulet, we can lots and lots of tomatoes using the recipe JennsPeeps posted. Very handy and versatile. We use them later for soup, stew, pasta sauce, pizza sauce, etc. Can't wait to have the first tomatoes of the season - about 2-3 more weeks here.
 
I am thinking of trying to can up some Pepper Jelly. I am going to have lots of Jalapenos this year (I just know it) and it's going to be way more than I would ever use or could think about giving away.

any other ideas for extra jalapenos??

whatever I make will probaby end up as gifts. because i bought 6 plants and probably only needed 2. but that's ok, gifts are always nice to have for people
 
I love pepper jelly! I've never heard of lilac jelly but it sounds intriguing.

What about making jalapeno cornbread, or sausage bread, or mixing them in with tomatoes for homemade type Rotel & salsa?

Thanks for the recommendation about Jenspeeps tom. recipe, I'm going search for it right now.

Does anyone here can tomatoes without a pressure/water bath canner?

We have a ton of tomatoes from the garden I'm not sure what to do with, but don't have a pressure canner at this time.

You can also freeze tomatoes. Just dunk them in hot water, peal and place in zip lock freezer bags. I have done this when I did not have enough to can. They taste great when you get them out for soup and such.

Enjoy your tomatoes. I am having trouble with mine.​
