What are you canning now?

wow, you could make mango salsa? I am still trying to like mangoes. LOL The pine after taste is something for me to work on. I have a fruit salad in the fridge right now with mangoes in it. My dh loves it but I am not sure yet. I would bet fresh mangoes are great.
Start with stuff that just requires a water bath..you will find lots of recipes on here. Oh, Miss Prissy, usually has pictures of the step-by-step process when she makes something great to eat. She taught me to make my own yogurt, mozzarella cheese, etc. Search these recipes and try to find something you feel comfortable with. And then let us know how you are doing!

So far the garden has only produced mustard greens and turnips but the squash will be ready in a few days, the corn, tomatos, limas, green beans, peppers, okra and cucumbers will probably all hit me at one time! Then there are the wild blackberries that will be ripe in a few weeks, and blueberries! The chickens LOVE the scraps! I spent this weekend putting turnip greens in the freezer and helping hubby with a new coop! I love SUMMERTIME!
 
Made 8 half pints of Rhubarb-Blueberry Jam mmmmm. Though it didn't set as well as I wanted it to but it is still yummy!

The blueberries were picked last July....figured I need to make room for this seasons harvest!

I've been stopping in to read this thread. You are all so busy canning already. Here in IN we don't get into the swing of it all until mid-summer.

I did make up some strawberry jam using frozen berries from last season. It was the first time I did this. I usually make it up when the strawberries are fresh picked. We used the last of the jam a month ago. We are very happy with the results using frozen berries.
I got 6 half pints and only have 4 left. Strawberry is the family favorite.

I use the low sugar pectin. Anyone else use that. That's all I used last year and will do the same this year.

when I ordered my Ball basic waterbath canning kit from walmart ($43 ish) I got the Ball blue book of canning. it is really easy to read. if you get a book I would say pick that one up. I saw it in a local grocery store, walmart, and you could probably find it in many stores that sell pots and pans. there's lots of information in it for a beginner like myself.
 
Made some strawberry jam, but it didn't set up correctly. Maybe because I ran short of sugar

It tastes lovely, though, and I think we'll have pancakes for dinner one evening so we can have some strawberry topping on them

Even jams & fruits?

I've gotta get my hands on some strawberries. Maybe this weekend? My grandma's rhubarb is rhipe and I rheally want some jam, pie, and cobbler fillings.
