Friendship Bread

I got the starter from ArabiansR2cool. I have made the bread a couple times now. The only complaint I have is that the bread has no keeping qualities. None!! I make it and it's gone in a wink!! Elves I think. Surely my brother and DH can't eat it that fast.

I used instant banana pudding by mistake, and that was great. Later loaves I added mini chocolate chips and walnuts to the banana.
I made mini loaves, wraped them in a doily and then plastic wrap and they made a really nice gift for Christmas.
Someone told me to try instant pistachio pudding. I never got around to that one, but I tried the other flavors of instant pudding. Chocolate wasn't that exciting. Not enough chocolate.
 
It's very easy to make a starter:



Amish Friendship Bread
Starter
1 cup flour
1 cup warm water
1/2 cup sugar
1 pkg. yeast or 2 ½ teaspoons
Mix all starter ingredients well and place in a medium-sized glass bowl. Cover with dinner plate so as not to cover too tightly. Let stand overnight in a warm place. Stir each day for four days. IMPORTANT: Do no refrigerate batter at any time!
On the fifth day, add:
1 cup flour
1 cup milk
1 cup sugar
Stir each day until the 10th day. Then add:
1 cup flour
1 cup milk
1 cup sugar
Stir. Measure out three 1-cup starters and make three copies of the instructions for distribution to three friends. (The starters will be the first day of the batter-making process.)
With the remaining starter, make the following streusel or bread.


Friendship Starter Streusel
Add this to remaining batter:
2/3 cup cooking oil
1 cup sugar
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
Mix well and spoon half of the batter into a greased and floured 13-by-9-inch baking pan.
In a separate bowl, make the streusel by combining:
1/3 cup margarine, melted
1/2 cup sugar
1/2 cup brown sugar
1/2 cup quick oats
1 cup nuts (optional)
Sprinkle half the streusel on the batter. Cover with remaining batter and top with remaining streusel.
Bake at 350 degrees for 35 to 40 minutes.

Amish Friendship Bread
To remaining batter, add:
1 cup sugar
2 eggs
2/3 cup oil
1 teaspoon cinnamon
2 cups flour
11/4 teaspoons baking powder
1/2 teaspoon soda
1/4 teaspoon salt
Optional: nuts, raisins, diced
fruit, coconut, grated
carrots, chocolate chips.
Mix well and pour into two well-greased (and dusted with cinnamon/sugar) full-size loaf pans or three to four small loaf pans. Sprinkle additional cinnamon/sugar on top.
Bake at 350 degrees 45 to 50 minutes. Cool 10 minutes before removing from pan. Or, if desired, glaze with confectioners' sugar icing.


Other recipes for the starter:

1 - 1 1/2 cups of starter
1 cup oil
1 cup sugar
1 tsp vanilla
3 large eggs
1 1/2 tsp baking powder
1/2 tsp salt
2 cups all purpose flour
1/2 cup milk
1/2 tsp baking soda
1 large box Instant Vanilla Pudding or 1 small box Instant Vanilla Pudding AND 1 small box Instant Lemon Pudding
2 tsp cinnamon
Put starter in mixing bowl, add all ingredients.
Pour into 2 large, well greased and sugared (mix cinnamon and sugar) loaf pans. You can sprinkle some extra cinnamon and sugar on top.
Optional: Add 1 cup chopped pecans and/or 1/2 cup raisins.
Bake at 325 degrees for 1 hour.

Variarion of the above recipe:

•*Omit cinnamon and vanilla pudding in the basic recipe and add two bananas (mashed) and banana pudding

•*Omit cinnamon and vanilla pudding from the basic recipe and add 1 - (2.1 oz) box of instant chocolate pudding, 3 tsp. cocoa and 3/4 cup chocolate chips. Bake for 1-1/2 to 1-3/4 hours.

•*Add one cup of raisins and one small diced apple.

•*Omit the vanilla pudding. Add 1 box of butterscotch pudding and 1 cup of butterscotch chips.

•*Replace the vanilla pudding with chocolate and add 1/2 cup each of chocolate chips and coconut.

•*Substitute ALMOND flavoring (NOT Imitation) for the vanilla flavoring and substitute WHITE CHOCOLATE pudding for the vanilla pudding.

•*Use lemon pudding and lemon extract in place of vanilla pudding and vanilla extract. Also add 1/4 cup of poppy seeds. and omit cinnamon and nuts. Add ¼ cup of poppy seeds

•*Omit cinnamon, nuts and vanilla. Use lemon flavored pudding, add 1 tsp. lemon extract and 2 cups coconut.

•*Use banana cream pie pudding and two mashed bananas. I have also added 1/4 cup of chocolate chip to this on occasion.

•*A cup of dried cranberries and a tsp of orange zest, along with a cup of chopped nuts, makes a nice holiday variation to the cake!

•*Add Craisins(dried sweetened cranberries) and chocolate covered raisins to the mix.

•*Add dried apples and caramel instant pudding (makes it like caramel apples).

•*Use 3/4 cup white chocolate chips, 3/4 cup macadamia nuts and cheesecake pudding.

•*Substitute 2 tablespoons molasses for equal amount of sugar and add spices to make gingerbread.

•*Add 1 cup of drained crushed pineapple, 1 cup shredded coconut and pistachio pudding (instead of vanilla).

•*Use 1 small box of orange jello, 1 c. drained mandarin oranges.

•*Use 1 small box of strawberry jello, 1 c. thawed strawberries.

•*Use Cheesecake pudding instead of vanilla pudding and add chopped maraschino cherries (about 6 with some juice). This tastes great and looks very festive.

•*Use different flavors of pudding: bannana, lemon, chocolate, and butter pecan. You can also made it with fruit such as blueberries and raspberries.

•*Add glazed fruit mix with walnuts and almonds. The result is a tasty fruitcake.

•*Use banana cream pudding and shredded coconut.

•*Use coconut cream pie pudding with crushed pineapple.

•*Use cappicino pudding , 1/2 C. chocolate chips and 1/2 C. nuts of choice.

•BASICALLY- You can put anything into the basic Amish Friendship Bread recipe.


ETA: It can also be used in any sourdough bread or sourdough pancake recipe.

LEMON ICEPICK BREAD

* 3 eggs
* 1/2 cup oil and 1/2 cup applesauce
* 1/2 cup milk
* 1 cup sugar
* 1/2 tsp lemon juice
* 1 1/2 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1 box instant lemon pudding
* 2 cup flour
Grease 2 large loaf pans. Dust the greased loaf pans with sugar. Pour the batter evenly into the two pans, and sprinkle sugar over the top. Bake for 1 hour or until a tookpick comes out clean. Cool for 10 minutes in the pan before turning out onto a serving dish. Using clean knife, make cuts on the top of the bread throughout it. Mix 1 cup of powdered sugar and 2 tbl of milk until well blended. Pour over the top of the bread and into the cuts made before.
