Sorry I won't be much help to you I don't raise Chickens, only quail.
BYC has a lot of info and pictures of coops on here maybe you'll find something you like. Hopefully someone else can help and are more knowledgeable about chickens.
What does everyone do with the eggs that don't hatch? do you cook the infertile ones and crush them feeding them back to the birds, do you feed them to the dog/cat or does everyone just toss them in the garbage or compose?

Yes, they can use the chicken nipples from day one. I use both the jar water with quail lid and nipple the 1st couple days until I see them using the nipple but they seem to take to it right away. I have used the rabbit bottle when they are older.

I would like some Bobwhite's someday. I love their looks and call. How do you keep them during breeding season 1:1?

It depends on what kind of quail. There is a lot of good info on BYC, a quick search of this thread will tell you a lot about the quail your planning on hatching or raising.
I got myself 18 coturnix quail eggs in the bator. I only wanted 6 eggs but... well you know how it goes. Due to hatch April 12/13.
