As far as I know, the only reason to remove water and food at night is to avoid messes. But I have a watering station that solves that problem, so my ducks have water with food 24/7.
If they are ducklings, it is not good to take away their water and feed at night, or at any time, not until they are about 10 weeks old, and then only for 8 hours or so.
I am concerned about their safety. What is the pen like? Predators will reach through chain link, or bend chicken wire...
Small, either chick grit, or even clean sand. If you are taking them outside for foraging, I think they'll ingest enough soil with sand and tiny stones to help.
