Do you know about how long the grass pieces are in general? I know when I've looked into this there was concern about crop impaction due to length of grass cuts.

Nice growth! They'll keep growing well even in colder temperatures, my household swings from upper 50's to mid 70's right now and at most it's moved things to an 8 day cycle instead of 7 day cycle for growth. With your warmer temperatures I bet your mats thicken up nicely rather quickly.
Inch depth is another good metric, I just use cups/sqft because that's how I measure out my seed to sprout so the mats are consistent - I'd say my mats are about 3/4 of an inch deep since I use a thick seed base. I haven't sprouted wheat mainly because I haven't found a good source for it, but...

How does the color of your suspected barred rock rooster compare to the other barred rock hens? Just as dark or noticably lighter?
The girls are darker (the effect of two copies of the barring gene makes male barred rocks have more white, appearing lighter overall).
Not sure about in regard to chickens, but at least with cats and dogs, fleas along with infected animals eaten (mice, birds, etc) can give them tapeworms. Not sure if flying insect can carry it, but if they had mice and your chickens caught a few mice that had fed over there, they could get it.

The last time I timed it, I was down to about 30-35 minute per adult rooster while dry plucking, cleanup time excluded. That actually surprised me, it's a lot faster than when I started doing dry plucking. I'm sure if my scalding setup wasn't such a PITA it'd be faster to do it that way.
For catching skittish birds just pick them up on the roost while sleeping and put them in a cage to deal with in the morning. Even skittish birds tend to calm down once you have them firmly in grip, so the chasing is really the most stressful part, IMO.
