Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

We had a few Dorkings that were crosses, and the meat was definitely lighter. I have not eaten any other heritage breeds - just cornish cross, dorking crosses, and pure dorkings. The breast of the Dorking is quite large, and the meat is very white. Not all of the meat is dark meat, however, what...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

I had a few that were a bit nasty and a few that were pretty sweet. I think it just depends on the roo. Our last one attacked my daughter, but I really think he was just being a good rooster and protecting his ladies. My daughter came running out of the house, hair all wild, no shirt (she's 2)...

Seems like all of my Dorkings have been broody all summer... I have 9 hens and get like 3 eggs a day :-/ Maybe Dorkings are better for soup pots!

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

For brining I used a huge plastic bowl with lid. The collapsible kind from pampered chef... so maybe its actually silicone.. To cook him I have this amazing enameled oval cast iron pot. I put it on the back burner on super low, with about a cup of water on the bottom just to make some steam...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

Well, my big beautiful rooster took his spurs to my 2 1/2 year old daughter, needless to say he wasn't around long after that. He met his fate the following morning. On the bright side he was delicious! He was the last of the Dorking roosters (I did successfully hatch 7 dorking babies, so...

I have a broody Dorking hen! Yeh! I put 9 eggs under her and hoping for the best. My first hatching of this whole dorking project, ohhhh what lessons will I learn this time around?

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

I let rest at least 24 hours. Three or four days is better, in my opinion. And a good day in a salt water brine also helps tenderize.

And my favorite part will happen tonight: pulling the meat off the bones and boiling it all down for the best, BEST chicken broth this earth has to offer. Its kept like a jar of gold in the refrigerator, its execution carefully planned and thoroughly enjoyed.

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

And here was dinner last night - after resting the bird for a few days my husband surprised me and cooked it. He used an enameled cast iron dutch oven, cut up a bunch of veggies and added a few cups of water - cooked it in the oven for an hour and a half. He didn't brine it like we usually do...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

I'm not even sure how I would ship something like that -- whats the process? Do they need to be kept warm? I'm sure eggs would be easier to send than chicks... maybe something Id be more interested in.

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

We're thinking about it - this is my first chicken adventure, so I'm not sure how things will go. The plan was to have a sustainable flock for table birds, but if all goes well I was going to sell some chicks as well.

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

We had two roosters remaining and they started fighting like crazy. I had plans of keeping them both but it would be too hard to keep them separate and still live a decent life. We processed our silver grey rooster two nights ago. He was 7 months old. Quite large, the second largest out of my...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

I did not. And I am mad at myself for not. I did weigh one of the carcasses at about 4.5 pounds - but he was not one of the big roosters and he was only about 4 months old. We had sort of a strange way of deciding who was dinner: I knew I wanted to keep the 2 largest, usually the largest would...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

Yes - those boys do crow a lot. They start dueling at around 5am and lighten up a bit around 8am. Then throughout the day they crow here and there. These two are pretty decent to the ladies, they do mate them which looks rough for a brief 5 seconds or so, but then they seem to keep them near...

Review of Dorkings as a table bird *update: pics and weight of our last Dorking rooster*

I actually gained interest in them in like May of last year - and searched all over the internet on a place to get some... apparently its pretty hard to get them short notice. I did find a woman who had an order into Sandhill Preservation from January and she was supposed to get them in May/June...
