tonight I am making:

Coffee and Sugar crusted Skirt Steak
Ingredients
 1/4 c. finely ground espresso coffee (not instant)
 1/4 c. dark brown sugar, firmly packed
 1 1/2 tsp. Kosher salt
 1/8 tsp. ground cinnamon
 1/8 tsp. ground ginger
 1/8 tsp. ground white pepper
 1/8 tsp. five-spice powder
 Pinch cayenne pepper
 2 1/2 lb. skirt steak, cut into 4 pieces
 1 tbsp. olive oil
Directions
1. Heat grill to high.
2. Combine coffee, brown sugar, salt, cinnamon, ginger, white pepper, five-spice powder, and cayenne pepper in a bowl.
3. Remove steak from refrigerator and let come to room temperature, about 15 minutes. Rub steak with oil, and sprinkle with rub. Massage rub into meat.
4. Grill until charred and medium-rare, 2 to 4 minutes per side. Transfer to a cutting board, cover with foil and let rest 5 minutes before thinly slicing at an angle. Serve immediately.

That sounds good!

All the talk about Salisbury steak made me hungry for it. So I dug out my mom's old recipe and made it up. I'll wait a while to start cooking it, DH is at work. There are sweet potatoes in the oven baking though...mmm, love those!

Things don't always taste like you think they would based on the ingredients. I make a steak that is completely smothered with cracked black peppercorns. Based on all the pepper on it you might think it would be hot to the taste but it isn't.

You're right about that! One of our BBQ sauces includes coffee...no one has ever guessed what's in it but that coffee does add to the overall flavor.

Making your own butter sounds neat. How much is 600ml? And British Cream? Could I use Heavy Cream? And how many cups?
Who knows I may want to try and beat some heavy cream and make a little butter. Thanks

It a bit of fun and nice to know there’s no added preservatives etc. Yes you can use heavy cream, whipping cream, it just needs to be thick basically. Have a try and let us know! :D the butter won’t last a long as commercial butter and make sure to drain all of the butter milk :) x
