I have a sort of bone field in mind. I love bones. Like a triumphant rooster crowing on top of a pile of bones. Smoke, fire in the background.

Peeling hard boiled quail eggs is not as easy as peeling chicken eggs. The vinegar removes enough of the calcium in the shell to soften it and makes it easy to use a knife point to prick the top of the egg and simply pull the shell and membrane off the egg. I made pint jars of pickled quail eggs. Boiling 50 at a time and peeling.
I would put 1/2 cup white vinegar in the water covering the eggs. Boil for five minutes. Turn off the burner, cover pan with lid and let eggs sit and cool in the vinegar water. Then I could peel them.

I always use a medium heat with cast iron.
