So for your recipe, what kind of meat is that that you are using? Is it quail? Or do you have access to goat meat like he used in that curry?
It's goat.
I'm letting it rest/marinate for only an hour though...not over night and I'll cook it for a good two hours.

I've never had goat before. Have you or is this a first time? I've never even seen it available for purchase before. Maybe if I traveled closer down to Nashville area where there are more diverse shops. Or once the farmer's market starts back up or something.
I cook it often.
Well not that often it is quite expensive here.

I can buy it at one of three places here.
My Indian grocery/meat market...I prefer this place because he let's me go in the back and pick my own slab, my Asian grocery store or the Mexican one.

What an awesome variety to have to choose from. We have Krogers or Walmart. Nothing exotic or ethnic. Just cookie cutter. That's why I said maybe farther down south towards, in or around Nashville. Nashville is just like 40min away from me so I don't get down that way very often.
