So I should add MORE dishes of water?

I thought for sure the humidifier thing would do something but all it seems to do is make things hotter.

Good idea! It would also expose the underside of the eggs to the warmth and humidity.

the kids have this mini donut machine thing. It came with a little rack. I can picture it perfectly in my head but I can't find it. I will continue to look.

Doubt it. Remember, surface area... that blocks off all but the holes.
