It's not easy to guess...especially since I have no clue how they have been incubating before I go them...etc.
The list could go on forever.
Balut is typically incubated buried in sand, then dug up when they are to be cooked.
So in other words, never turned.
Also fun little tidbit about Vietnamese Balut: The taste depends on the breed of duck. Hot vit lon from Muscovy ducks (a leading breed in the U.S.) are considered among the best. You can half-hatch chicken eggs too but duck eggs are larger and more prized.

Yes...The Man sells chicken balut eggs too.
I highly doubt the peeps in Dallas are incubating in sand. They (the regular balut eaters in Vietnam) might be using the sand method though.

I'm willing to bet they have bators running, probably non stop just for their Houston customers.

I haven't even began to research balut suppliers in Dallas yet.
I had spent a little time trying looking for a Houston one a while back but couldn't find it/one.
