I did that for the first couple batches I processed, but haven't for the last couple. I think it depends on how you butcher. If you are going to keep them whole you should probably withhold food for 12 hours and provide plenty of water. If you are going to cut the spine out you don't really need to withhold food.

I am thinking I will try to keep them whole but will probably end up making a mess and having to cut them anyways.

Nope, what is your goal? Keep your eye on the goal. Being hungry is not starving.

If you are going to do it tomorrow morning, just put them in a temporary pen overnight with only water no food. That gives them several hours to work whatever's in their digestive system out and you don't need to feel bad because they were sleeping during it.

If I am going to process it's in the am, usually about 8... so I take the food away by 8 pm.. they are sleeping through most of the fast so they are just hungry in the morning.

I have to go work on a turkey pen, be back later. Don't psych yourself out. Plan what you are going to do and rewatch some youtube videos to make sure you feel comfortable with the process. You can do it.
